A tradition born from the belief that bread deserves time
Spotted Apron Organic Sourdough began as a quiet conviction: that the bread we break at our table should be worth the wait. In 2019, our founder started fermenting in a small kitchen on Greenville's historic east side, nurturing a starter that still bubbles on our counter today.
Every loaf that leaves our oven carries forty-eight hours of patient work—wild yeast, organic stone-ground flour, and salt. Nothing more. Nothing rushed. Our café on Warren Street exists to share that patience with you, whether you're joining us for morning coffee or an evening glass of natural wine paired with our house-made flatbread.
"The best things cannot be hurried—not wine, not friendship, and certainly not sourdough."
